Lead consultant and owner of Elydan Food Safety, LLC.
Elysée Saint-Elie earned his DEUG from Jussieu University in Paris, France, in 1975 and brings more than 47 years of progressive experience in the food industry. Throughout his career, he has held multiple executive-level positions in Quality Assurance, Food Safety, and Regulatory Affairs, providing strategic leadership to ensure compliance with global food safety standards.
In his most recent corporate role as Director of Quality Assurance, Food Safety, and Regulatory Affairs for a major French bakery chain, Elysée trained hundreds of employees and led the development and implementation of comprehensive HACCP plans and prerequisite programs. These systems were designed to ensure full compliance with the BRCGS Standard, the U.S. Food & Drug Administration (FDA) regulations, and the Food Safety Modernization Act (FSMA).
He has also participated in national food safety policy discussions with U.S. congressmen and senators and contributed formal legislative comments during the development of FSMA in 2010 and 2011. His regulatory insight, combined with decades of operational experience, enables him to assist companies and governmental health agencies in establishing robust preventive food safety systems to mitigate risks associated with pathogens such as Listeria monocytogenes, Salmonella spp., and E. coli.
Elysée works as an independent contractor for several certification bodies (CBs) and conducts third-party audits under the BRCGS Global Standard for Food Safety. He is approved and serves as a Lead Auditor for multiple BRCGS product categories, including:
Category 2 – Meat
Category 7 – Dairy and Liquid Egg
Category 10 – Ready-to-Eat (RTE) Foods
Category 14 – Bakery
Category 15 – Dry Foods, Warehousing, and Mills
Category 17 – Snacks
In addition to certification audits, he conducts GMP inspections, internal audits, and comprehensive gap assessments. He has provided food safety training, conducted gap assessments, and supported program implementation for companies across the United States, Canada, Costa Rica, South Africa, Trinidad, Barbados and Tobago, and Botswana, as well as other regions.
